Hummus

Hummus on a plate with vegetables.

Ingredients

2 cans of garbanzo beans (chickpeas), liquid reserved
1/2 cup tahini (sesame paste), optional, with some of its
oil
3/4 cup AlphaWOLF extra-virgin olive oil, plus oil for
drizzling
4-6 cloves garlic, peeled, or to taste
1 cup pitted Kalamata olives (any olive will work)
1 tsp Salt and 1/2 tsp freshly ground black pepper
1 tablespoon ground cumin, plus a sprinkling for
garnish
1 tablespoon ground smoked paprika, plus a sprinkling
for garnish
1/2 tablespoon Harissa
Juice of 2 lemon and their zest plus more to taste

Directions

1. Put everything in a food processor, (save 1 TBL of
the olives for a garnish) and begin to process; add the
chickpea liquid as needed to allow the machine to
produce a smooth puree.
2. Taste and adjust the seasoning. Refrigerate to allow
the flavors to marry. Let come to room temperature
before serving.
3. Serve with chopped parsley, chopped Kalamata
olives, a drizzle of olive oil and sprinkled with a bit more
cumin and/or paprika, ...Raw veggies (especially red,
green, orange and yellow peppers) and any kind of
chips work well...Great on sandwiches also.
