BAKED MAHI MAHI WRAPPED IN RED LETTUCE LEAF
- 2 lbs Mahi Mahi*
- 8 Leaves of Red Leaf Lettuce*
- 1 tsp Old Bay Seafood Seasoning
- 1/2 tsp Ground Cumin
- 2 tbsps Olive Oil
- 2 tbsps Butter
- 1 Medium Fresh Lemon cut in half
- Salt and Pepper to taste
Cut fish into four 8oz pieces.
Coat fish pieces with 1T of Olive Oil.
Season each piece of fish with Old Bay Seasoning, Cumin, Salt and Pepper.
Wash lettuce and dry with paper towels.
Lay lettuce leaves flat on counter.
Place fish on leaves and roll up then tuck under the ends for each portion.
Pour remaining TBS of Olive Oil in baking pan.
Place the 4 finished bundles in the oiled baking pan.
Squeeze lemon liberally over the 4 fish bundles removing any seeds.
Cover and bake at 375 degrees for approximately 15 to 20 minutes until internal temperature reaches 140 degrees.
Pull from oven, place a slice of butter on top of each bundle and put under broiler for 1 minute.
Spoon pan juices on top of bundles
